My Ginataang Munggo Recipe

I have been wanting to eat Ginataang Munggo for the past few days because of the cold weather. I haven’t eaten this for quite some time, and when I say quite some time, that was eons ago. If I remember it right the last time was on 2006 when we were still in Quezon Province. Hahaha. 10 years, man! So, let me share you my humble Ginataang Munggo recipe. 

What you Need:
-          Half a cup of Munggo  ** I used the green ones, but I guess the sweet (black) one is better
-          1 Cup of Malagkit, washed  (sticky rice)
-          4 cups of Coconut milk
-          Sugar to taste
-          Latik (for toppings)

Now, let’s start cooking.
-          Heat the pan and toast the (Munggo) beans until brown, do not burn the beans!
-          Turn off heat, transfer the beans to a bowl and let it cool down
-          Using a mortar and pestle, slightly break and crack the beans – don’t over do it, you doesn’t want to have a powdery munggo , then set aside.
-          Heat the cooking pot  and pour in the coconut milk, bring to boil.
-          Add the malagkit rice, stir .Let it sit for atleast 10mins, then add in the Munggo Beans.
-          Cook in low heat for atleast 20mins or until the rice are completely cooked and the coconut milk has been properly absorbed.
-          Stir occasionally.
-          Add sugar to taste. You can also add half a cup of evaporated milk if you wish.
-          Turn off heat and Serve!
-          You may add the latik on top

This is one of my favorite meryenda/snack when I was a kid, ansabe ng Risotto ng Italya? Hahaha.  Try it and bring back your childhood through this yummy ginataang munggo J
